One may say that cooking delicious, from-scratch food is in Ed Lovelock’s and Elaine Munroe’s blood.
After meeting while they both worked at Smitty’s restaurant in Georgetown many years ago, the couple went on to build a solid career in the restaurant industry that has spanned decades.
They took a leap of faith and went out on their own in 2010 with the opening of The BriSkit, which serves up gourmet slow-cooked sandwiches and more in its Brampton location that’s now open on Saturdays too during the winter months.
“From the beginning, we made sure everything was homemade, right down to the gravies,” said Munroe. “Everything is fresh.”
This sentiment has carried over into their food truck menu, which they’ve become known for around Halton Hills, particularly since it’s routinely parked at their Georgetown home.
“When Ed drives the truck through town on the way to any event, the amount of people that honk and wave at him is incredible,” said Munroe. “He’s known as the Brisket Man.”
With an abundance of burger joints out there, brisket - a cut of beef that’s best cooked low and slow - was selected as the star of the couple’s restaurant and food truck to set them apart from the pack.
They serve fresh slices of brisket in a variety of ways, including the BriSkit Melt with caramelized onions, real cheddar cheese, barbecue sauce and mayo and the BriSkit Philly Melt, complete with red and green peppers, caramelized onions, mushrooms, mozzarella cheese and barbecue sauce.
The menu includes many other options, ranging from pulled pork and chicken sandwiches to hamburgers, Angus beef hot dogs and poutine.
Large platters with ribs, brisket, pulled pork, chicken and more can also be made to order and picked up at the couple’s Georgetown home or the restaurant.
And let’s not forget about the holiday meal they offer - a complete turkey dinner with all the trimmings, ready for pickup on Christmas Eve or Christmas Day.
So what’s the couple’s secret to happiness after all these years of not only living together, but working side by side?
“The main thing is you leave work at work,” said Munroe. “There are days where things might get a little testy, but when we get home, that part of the day is done.”
Local residents looking to get their brisket fix will find The BriSkit food truck at the Christmas Market in the Glen on Dec. 3 from noon to 4 p.m.
